A Day at the West Farm (Bistro West) ~Carlsbad

I was fortunate enough to attend the Firestone Walker dinner at Bistro West in Carlsbad and taste Jason Connolly’s food (also a call out to Sous Chef Cody Carline…Sous chefs get no love)

You can read about that event here…the second and fourth course would have held up against any 2 or 3 starred Chef.

Anyway; I was lucky enough to be invited to visit West Farm. I grew up in north County and had no Idea this place behind Car Country Carlsbad existed. It was so beautiful.

Farm to table is a catch phrase that is tossed around a lot…these guys have their own farm a few miles away from their restaurant. The other two Chefs Davin and Beau are the same way…pick their own produce and are dedicated.

The West Produce Farm is located just a few miles from West Village off El Camino Real in Carlsbad. The farms close proximity to their restaurants, Bistro West & West Steak and Seafood, make it an ideal location for their chefs to plant, review and harvest the season’s plantings daily. At West their farm is personal. It’s working the soil, nurturing and harvesting which is all performed by their team and culinary professionals who craft the menus around nature.

I brought two of the best Chefs in North County with me.

and Chef Jason Connolly from Bisto West who hosted us.
