The long and short of it “run do not walk” to this restaurant. This was another instance of me being sceptical and being blown away. this was probably the best meal I have had this year.
Perfect Pairings is the brainchild of proprietor Alex Morrison and Chef Aaron Gentry. The restaurant is based on all tasting menu, with beer, wine, or tea pairings. that is a bold move for North County and if it wasn’t so good it would border on crazy.
The choices are a 3, 4, or 6 course menu….I went with the 4 course and after the first plate wish I had gone with the 6 course.
The other interesting thing is they build the dishes back wards from the wine / beer. Instead of tasting the dish and pairing the wine they taste the wine and build the dish…that was very eye-opening.
Amuse ~ Red and gold beet puree, Chevre, Za’ Atar, Aleppo Chili, Camut cracker
perfect start, fresh and flavorful
Moonfish Almondine ~ Meyer lemon zest polenta, fine herbs
Wine ~ Onx field Day ’12 ( SV Blanc / Viognier )
Moon fish or Opah rocks and is starting to show up a lot more now. the fish was perfectly cooked and seasoned as to not take away from the natural flavor.
That is how fish should be cooked.
Winter Squash Croquette ~ Anch Chile aioli
Wine ~ Mathis Grenache ’09
The croquette looks like it would be heavy but in fact were light and fluffy and paired perfectly with the aioli (pssst more aioli it is so good)
Wine ~ Chamisal Estate Pinot Noir ’11
So it says prawns and there were two but I could not control myself and dug in before taking pictures. Perfectly cooked prawns with a great raw salad.

nice to see a real cheese board.
Again I was really happy i made the choice to go to Perfect Pairings. I have a whole list of places i want to go to this week and i just really want to go back.
