Partake Gastropub Coming to Vista

I am very excited to see Partake, a new Gastropub concept, coming shortly to Vista. While I usually do not cover Vista on a regular basis this development is a bit different.

The concept will highlight boutique hard to find wines and nano-brew beers. The most exciting thing for me is who will be running the kitchen. Ian Smith has been tapped (no pun intended) to head up the kitchen.

Chef Ian was co-Owner and Chef at Swoon Dessert Bar in San Diego. Swoon was a Dessert only restaurant that was inventive and exciting. Personally I just don’t think San Diego was ready for the concept that in my opinion would have Killed in San Francisco or New York. (Momofuku Milkbar anyone?)

A couple of Chef Ian’s creations from Swoon

swoon dessert

Oven roasted peach ice cream/ Pudwill summer berries/ white corn studded cornbread/ black pepper honey/ raspberry sea salt

swoon 2

Bulleit bourbon butterscotch pudding/ dark chocolate caviar/ salted maple cream/ chocolate cake crumb

After Swoon closed Chef Ian held a brief sting at the popular Carnitas’ Snack Shack where his influence on the menu could be immediately seen. While Swoon was a  Dessert based venture the Chef is just as adept at the savory side of things.

I should have some pre-opening pictures and Menu details soon. Just wanted to share my excitement. When all the Chefs you know are excited about a Chef and a project you know it’s a good sign.

    • I was there today taking pictures and meeting everyone, looks like soft opening this weekend to next week sometime. After talking with Chef Ian and the wonderful owners, I am even more excited about this restaurant (and I was pretty excited before)
