So, I have always wanted to have egg yolk ravioli. You just do not see it on menus ..or I just missed it “We had it last week”. Chef “Willy” from Real Bar and Bistro said “Come down I will make some special for you, using my own recipe.”
I can now check this off my bucket list 🙂 I dragged my friend and a great Chef in her own right, Christine from Petite Madeline Bakery & Bistro.
This has been the best meal I have had this year. It was thoughtful, creative, and made me think.
First Course ~ Fava bean and Mascarpone Ravioli, peas, carrots, house made ricotta, wild ramp/fennel frond pesto, mustard greens.
Perfect pasta, perfectly cooked carrots…and it gets better.
This is what I came for and it was one of those dishes you have to wrap your mind around.
Egg Yolk Ravioli ~ (raw) Egg Yolk Only ravioli, bolognese jus emulsion, truffle, mustard greens.
Local Honey Comb and house made Parmesan…..please son.
This guy is 26 doing this stuff.
