Where to begin? Chef Willy Eick is probably one of the best Chef’s I have ever met. That is not a slight to anyone else. I have just spent time talking with him enough to know. A. how much he cares, B his skill level, C, his desire to continue getting better, and D, probably the best plating skills I have seen. Also, I understand this all subjective. Yet, I am comfortable with my praise of him.

This is just going to be pics. This was $25 …really. Go find better food for that price.

Small, interment, clean. What you want from a local place.

Run by a great Boy and Girlfriend team. They were bartenders at Harrah’s for years. I think bartenders are the Marines of the kitchen world. They face all the MG fire, Kitchen staff is Army, sit back and use artillery, and executive Chefs are the Air force. I will stick by that:)

Bread and Barley ~ Leucadia

So, Bread and Barley recently opened a second restaurant in Leucadia along the 101 at 542 N. Coast Highway. The first restaurant is located in Covina, Ca.

I hit them during soft opening. They focus on affordable well crafted food and craft beer, though they do run a full bar. It is just good solid food. It is not going to change your life but if you want a good lunch or dinner, I would check them out.

The place is not that big. When I was there they could not open the patio, I am guessing 60 seats or close to that either way.

Steak Sandwich~Grilled Hanger Steak, Chimichurri, Gruyere Cheese, Sourdough

Great sandwich, the steak was so tender and had obviously been marinated for a while. probably one of the best steak sammies I have had in a long time. House made chips.

If you are in the area, perfect place for a business lunch or a meet up. Roll up windows, so light and airy. great staff. They will do just fine, especially with the coming summer foot traffic.

Next week they should be in full open mode, with a full menu.

Crack Shack ~ Encinitas

The Crack Shack Encinitas, located at 407 Encinitas Blvd., is the second incarnation of the fast casual chicken restaurant by Michael Rosen and Richard Blais. Richard Blais is probably best known for his appearances on Top Chef as well as owning San Diego’s Juniper an Ivy.

The Encinitas location used to be Coco’s. With extensive remodeling I believe nothing remains of the former structure other than support beams and foundation.

Hard to miss a giant chicken.

The interior is one large open room with a large wrap around bar. They serve beer, wine, and liquor.

It is a fast casual order system. You order at a window outside near the entrance and food is then brought to your table.

They serve a number of sandwiches, fried chicken, salads, and a few odd ball items like Mexican poutine, deviled eggs, and matzo ball pasole.

When I first tried the Crack Shack at their little Italy location I declared it to be the best chicken sandwich I had ever had. While this time it was not that much of a life changing moment, it was still damn good.

G-Bird and Firebird

The G-Bird ~ Chicken breast, shishito pepper relish, swiss, romaine, tomato, whole wheat brioche.

This was my favorite of the two. Really fresh tasting. I think the shishito pepper relish added a lot of flavor. Chicken was moist and beautiful

Firebird ~ Spicy fried thigh, cool ranch, pickles, crispy onions, potato roll.

Not very spicy and the crispy fried onions became wet limp onions. Still tasty chicken and the pickles are a smart addition.

The sandwiches are not pretty ( don’t be sandwich hating) but are tasty.

So, the plan was to have a friend come with me so I could show you guys two sandwiches. She could not make it so I ordered two and figured I’d take half of each home. Yeah, that didn’t happen. Lots of walkies tomorrow.

If you have not been I would check them out. They get busy so best to go off hours. I went at 1:30 ish on a Thursday and it was slow. They open at 9am but serve full menu.

They are expanding, to Costa Mesa I believe. This is a money-maker, best of luck to them.

The Roosevelt ~ Carlsbad

The Roosevelt is an Italian style gourmet Pizzeria located on, funnily enough, Roosevelt street in Carlsbad. It is owned by Hector Reyna who helms the kitchen along with his son Stephen, you may know Stephen as former head Chef of the Privateer.

The Roosevelt is a little off the beaten path. The best way to find it is to find Pizza Port in Carlsbad and then walk on by it to The Roosevelt.

Simple, modern interior. Seats about 60? Plus a patio.

The Roosevelt serves Classic Italian with a twist. A farm to table mentality with almost everything made in-house.

The menu features salads, veggie dishes, piatti like meatballs, lasagna, stuffed shells, and of course pizza.

I started with the caprese…

Caprese ~ Mozzalrella, basil, local tomato, olive oil, balsamic.

I love caprese. It is a simple flavor combination that is just perfect. Because it is so simple the ingredients have to be top-notch. These were. You can tell a cheap mozzarella a mile away. it should be like this, soft and creamy. Also tomatoes at room temperature, as they should be. A+

Carlsbad Pie ~ Tomato, hen of the woods mushrooms, garlic, black olive, mozzarella, and an add-on of their house made sausage.

A pizza requires a great crust, a great sauce, and great cheese, otherwise it falls apart. It is like culinary Jenga.

The crust was perfect, crispy yet still light and fluffy. The sauce is so light with a slight acidity that works off the sweetness of the dough. I love Hen Of The Woods (Maitake) mushrooms. The in-house sausage was great, yay no nitrates.

OK, cheese. If you are used to shredded cheese being spread all over your pizza, this is not that. This is slices of mozzarella that melt. Think of it as a topping and not a base.

Prices are reasonable for the quality you are getting. I would say almost a steal. My pizza was $13 plus $3 for the additional sausage. A Papa Johns large sausage pizza is $18 and should never be eaten. *if you are extremely drunk you get a pass on that decision.

We have a lot of great pizza in North County take advantage.

Crust Pizzeria ~ Carlsbad

Crust Pizzeria is a Chef driven, gourmet pizza restaurant located on the border of Carlsbad and Encinitas at 3263 Camino De Los Coches, Carlsbad. (sprouts shopping center.)

The restaurant is pretty large with a medium-sized bar area, an open kitchen area, and seating for about 75 inside and an additional 40 on the patio. Still it gets busy on nights and weekends.

Tasia ~ Belle chevre goat cheese, kalamata olives, grilled eggplant, zucchini, Grande Mozzarella, feta cheese, oregano, lemon zest, and chili flake.

The pizza I had on a previous visit was the Sophia ~ Spicy sausage, crispy chard, olive oil, fontina cheese, ricotta, and rosemary.

I do not have a pic because my phone ate it:(  but it was delicious. Perfect crust, loved the quality of the cheese and the balance of flavor.

I would put crust in the top 4 pizza places in San Diego at the moment. First off don’t give me the Filippi’s they are mediocre. Pizza Port is OK if your close and want to grab lunch. Urbn does not know how to cook or time their crust, both times it was charred and inedable around the outside ( and I was there when it was slow so it’s not like they got distracted.)

No, I would say Biga, Crust, and The Privateer followed fourth by Pizza Maniac (for an old school grab a slice after work or school place.)

I know I talked mainly about pizza but Crust also does pastas, salads, and sandwiches.

I plan on going back for non work eating soon to explore the menu a little more along with going back to Biga for lunch because it was too dark for pics at dinner.

New Brunch Menu @ Masters Kitchen and Cocktail ~ Oceanside

It has been a while since I visited Masters, at least 3 months. Their new Chef and Brunch menu caused a stir for me to meet up with my friend Beau Bonham and check it out.

Chef Richardi is originally from Florida. He began his culinary career as a line cook at Pacifica Del Mar, from there he rose through the ranks at  Rancho Valencia, La Valencia Hotel, The Chart House, The Santaluz Club and Roppongi. He is now Executive Chef at Masters and has started to put his stamp on their menu.

The new brunch menu features a good range of dishes from decadent to healthy and simple.

Of course we went for decadent. I just did a three-mile beach walk and Beau, like me, eats very simple when not dining out.

House cured salmon, micro greens, and radish.

Perfect, and I mean perfect cured salmon. I almost went with the everything bagel on the menu because of the salmon but this scratched that itch perfectly, freeing me up for other choices. Thanks Chef.

Masters Steak benny (1 of 1)

Steak and Eggs Benedict ~ Flat Iron steak (cooked perfect medium rare), poached eggs, artisan sourdough, hollandaise, and breakfast potatoes.

The steak was on point and the hollandaise was not over powering. A lot of hollandaise is thick and for lack of a better term gluggy..not this one. Also those potatoes, next time I am ordering an additional side order of those. They reminded me of patatas bravas..so good.

Beau stole the show though…

Chicken and Waffle ~ Rosemary waffle, fried chicken breast, smoked bacon, chicken apple sausage gravy, over easy eggs.

A lot of brunch places near by do a chicken and waffles dish. This one is different, it ditched the classic maple syrup route for something more complex. The gravy, I believe due to the apple sausage kept the sweet element and the fry on the chicken breast was almost reminiscent of a Milanese. Also huge, leftovers to take home kind of dish.

The other thing that made me happy was it was crowded.

The Power of Food. The Pork Chop @ The Flying Pig Pub & Kitchen~ Vista

So, this is just a quick post about the power of food. The fact that great food transcends a meal. It is a memory or creates one. It brings you to your childhood or suspends the outside world around you.

I am very lucky to eat and experience a lot of great food. Beyond that, in eating that food, it has brought people into my life who are now great friends. It has given me memories and knowledge. So when I talk or write about food, I am actually writing or conveying a lot more (or trying to).

Every payday it has become a ritual of mine to go to the Flying Pig (mostly the Vista location) and eat their pork chop. Now it’s a great pork chop, probably the best I have ever had, but beyond that I just sit and savor it. The tenderness from the brine, the sweetness from the char, and the flavor from quality of the pork, and while I am eating it everything is right in my universe.

I am back home now writing this and I am just happy, I totally believe in the food high and it’s not the wine because I only had 1 glass:) I am going to go to bed now to dream of magical pigs.
